Most people use it whole: simply by slicing off the bottom of the stalk, peeling off any dried-out layers, then bashing the woody top end with a rolling pin to soften and release some of the aromatic oils. This amazing ingredient makes its debut as the hero ingredient for the month of September across all Hilton hotels in Malaysia.

  • Touch - Regarded as the elementary sense, guests can experience lemongrass with their tongue, teeth, palate and fingertips. As consumers place greater emphasis on the food they eat, food texturisation is seen as an area of opportunity for us to develop new, innovative textures in the food we serve. It is also testament to how our chefs use their creativity by incorporating the element of touch in their lemongrass creations.
  • Sight -- It is said that one eats with one's eyes. Sight is the most evolved of our senses and perhaps the most delightful. It is sight that allows you to see color, which influences our idea of flavors. Our chefs choose the freshest of lemongrass stalks that are firm, pale-green and bulbous at the base, bringing out the delicacy of each dish whether used in teas, soups and curries or in meat, chicken and seafood dishes.
  • Smell -- Smell acts in tandem with taste to identify food flavors and helps us to appreciate the alluring flavors of food and drink. The smell of lemongrass known to be relaxing, soothing and balancing has a light and fresh lemony smell with earthy undertones. This September the lemongrass fragrance will waft throughout all Hilton hotels in Malaysia as a distinctive marker. Our sense of smell also has an immense bearing on our cravings.
  • Hearing -- A relationship between the sense of hearing and lemongrass may sound far-fetched. However, think of the sounds you associate with when you take a cup of tea infused with lemongrass. The sound of the bruising of lemongrass to release the essential oils while the stick falls into the pot; the whistling of the kettle indicating the tea is ready; the sound of tea being poured and of taking a sip of the delicious drink indicating domestic harmony that lulls you in to a serene isle of tranquility.
  • Taste -- This is the most appealing sense of all. Taste comes mostly from smell, and what we call flavor is usually a combination of taste, smell, temperature and texture of food. Did you know that lemongrass has a flavor profile of its own? While it is citrusy with a lemon-flavor, it tastes almost like a mix of lemon and lemon mint, which is light and does not overpower other flavors in a dish. It adds a slightly sharp and tangy taste without the bitterness of a lemon.
